These curried chicken tea sandwiches are a quick, colorful twist on chicken salad. Sweet apple, tart cranberries, and a touch of curry make them perfect for brunches, showers, or an easy lunch.

- 1 unpeeled red apple, chopped
- 3/4 cup dried cranberries
- 1/2 cup thinly sliced celery
- 1/4 cup chopped pecans
- 2 tbsp thinly sliced green onions
- 3/4 cup mayonnaise
- 2 tsp lime juice
- 1/2 tsp curry powder
- 12 slices breadfor tea sandwiches
- 12 lettuce leavesfor serving

Combine the chicken, apple, cranberries, celery, pecans, and green onions in a large bowl.

Stir together the mayonnaise, lime juice, and curry powder in a small bowl. Fold into the chicken mixture until coated, then cover and refrigerate until ready to serve.
Tip: Chill briefly so the flavors blend and the salad firms up. -

Cut each bread slice with a 3-inch heart-shaped cookie cutter. Top each piece with a lettuce leaf and a spoonful of chicken salad.
Tip: You can also cut the sandwiches into triangles if you do not have a cookie cutter.
