Ingredients

Scale
  • 1 1/2 lb skinless, boneless chicken breast halvesbutterflied
  • 2 tbsp butter
  • 3 cloves garlicminced
  • 1/2 tsp dried oregano
  • 1/4 tsp ground thyme
  • 1/2 cup chicken brothdivided
  • 1/2 lb bacon
  • 1 (16 ounce) package angel hair pasta
  • 1 tbsp all-purpose flour
  • 1/2 cup freshly shaved Parmesan cheese
  • 1/4 cup whipping cream
  • 1/4 cup chopped sun-dried tomatoes
  • 1 pinch red pepper flakes
  • saltto taste

Instructions

  1. 1

Gather the ingredients and preheat the oven to 350Β°F.

  2. 2

Place the chicken breasts on a flat surface. Slice horizontally through the middle, stopping before you cut all the way through, then open and butterfly them.

Tip: Butterflying helps the chicken cook evenly.
  3. 3

Melt the butter in a large oven-safe skillet over medium-high heat. Add the garlic, oregano, and thyme, and cook for about 30 seconds until fragrant.

Tip: Watch closely so the garlic does not brown.
  4. 4

Add the chicken and cook until golden but not fully cooked, about 3 to 4 minutes per side.

Tip: The chicken will finish cooking in the oven.
  5. 5

Pour 1/4 cup of the chicken broth into the skillet and transfer the skillet to the oven. Bake until the chicken is no longer pink in the center and the juices run clear, about 15 mins.

Tip: Use a thermometer if needed; the chicken should reach 165Β°F.
  6. 6

Meanwhile, cook the bacon in a large skillet over medium-high heat, turning occasionally, until browned, about 10 mins. Drain on paper towels, let cool slightly, then chop.

  7. 7

At the same time, bring a large pot of lightly salted water to a boil. Cook the angel hair pasta until tender but still firm, about 4 to 5 mins. Drain and keep warm.

  8. 8

Remove the skillet from the oven and transfer the chicken to a plate, leaving the juices in the skillet. Keep the chicken warm and return the skillet to the stovetop.

  9. 9

Whisk the flour into the skillet over medium heat. Add the remaining chicken broth, Parmesan, and whipping cream, and whisk until smooth.

Tip: Whisk well to help the sauce thicken without lumps.
  10. 10

Add the sun-dried tomatoes, red pepper flakes, and salt. Stir in the bacon and return the chicken to the skillet.

  11. 11

Serve the chicken and sauce over the hot cooked pasta.
