- 1 medium onion
- 2 ribs celery
- 1 cup carrots
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried parsley
- 2 pounds russet potatoes
- 14 ounces smoked sausage,
- 64 ounces chicken broth
- salt and freshly ground black pepper to taste
