Fluffy Mayo Pancakes

These fluffy mayo pancakes are a quick breakfast with a surprisingly tender texture and a rich, buttery flavor. The mayonnaise blends right into the batter, giving you light pancakes that cook up beautifully on the griddle.
Ingredients
- 1 1/2 cups all-purpose flour
- 2 1/2 tbsp granulated sugar
- 1 1/2 tsp baking powder
- 1/4 tsp kosher salt
- 1/2 cup mayonnaise
- 1 1/4 cups water
- 1 1/2 tsp vanilla extract

Whisk the flour, sugar, baking powder, and salt in a large bowl. Make a well in the center.

Add the mayonnaise, water, and vanilla to the well. Stir until combined, then gently mix into the dry ingredients until just blended.
Tip: Do not overmix or the pancakes can turn dense. -

Melt a little butter in a large nonstick skillet or griddle over medium heat.
Tip: The pan is ready when a drop of batter sizzles gently. -

Spoon about 1/4 cup batter per pancake onto the hot surface and spread lightly into rounds.

Cook until bubbles form on top and the edges look set, about 3 mins. Flip and cook the second side until golden brown.
Tip: Lower the heat if the pancakes brown too quickly.
